Dal 31 Ottobre 2014 al 2 Novembre 2014 si terrà a Cascia La Mostra Mercato dello Zafferano Purissimo di Cascia.

La manifestazione, nota in tutto il territorio e in Italia, riempie la piazza di Cascia con stand ed espositori gastronomici e da sempre vanta un grande numero di turisti ed esperti del settore.

L ‘obiettivo della mostra è infatti quello di riscoprire, valorizzare e promuovere il sapore del purissimo Zafferano di Cascia, prodotto di antichissima tradizione utilizzato e conosciuto per le sue preziose qualità e molteplici impieghi in ambito tintorio, medico, farmaceutico, cosmetico e gastronomico.

Lo zafferano era molto diffuso tra i popoli antichi. Simboleggiava l’amore infelice in ricordo del mito del giovane Crocos innamorato della ninfa Smilax ed evocava simboli opposti. Veniva utilizzato per colorare le vesti e per preparare profumi, creme, unguenti.

L’uso dello zafferano anche in cucina si fa risalire all’epoca medievale e rinascimentale, quando cominciò ad essere usato per colorare ed aromatizzare i cibi. E’ una spezia rara che conferisce al cibo un gusto ed un aroma particolarmente intensi, oltre al caratteristico colore giallo ocra.

La produzione di zafferano in Umbria è testimoniata a partire dal XIII secolo con Città della Pieve che all’epoca era considerata la zona di produzione maggiormente rilevante. Nel tempo l’interesse per lo zafferano si estese anche a tutta la Valnerina finché Cascia nel XVI secolo si impose come uno dei centri più attivi nel commercio di questa spezia. Nel Seicento si assiste invece al progressivo abbandono della coltura e solo da pochi anni è stato possibile registrare un rinnovato interesse per la sua coltivazione.

Durante l’evento, ogni anno, benchè il programma di questa edizione sia ancora in fase di definizione, molti in genere sono gli appuntamenti collaterali previsti per conoscere le molteplici utilizzazioni della pregiata spezia. Lo Zafferano in Mostra ed in Biblioteca per indagare sui molti testi, documenti e manoscritti, con argomento lo zaffarame di Cascia; lo Zafferano in Tavola con la possibilita’ di degustazioni di ricette antiche e/o reinterpretate, lo Zafferano in Campo, attraverso escursioni guidate per visitare le aziende produttrici di zafferano ed i campi coltivati.

Saffron production in Umbria is evidenced from the thirteenth century with Città della Pieve, which at the time was considered the most important area of production. Over time, the interest in saffron is also extended to all the Nera Valley (Valnerina) in the sixteenth century, until Cascia established itself as one of the most active in the trade of this spice. In the seventeenth century we witness the gradual abandonment of the crop and only a few years ago it was possible to register a renewed interest in its cultivation.
During the event, each year, though the program of this edition is still being defined, many side events are generally expected to learn about the many uses of this precious spice.
