La DOC, denominazione di origine controllata, e l&#8217;ancor pi\u00f9 protettiva DOCG garantiscono il vino bianco umbro e la maggior parte dei vini della regione; tuttavia meritano una particolare menzione alcune variet\u00e0 di vitigni che definiscono al meglio il carattere enogastronomico della regione. I <strong>vini bianchi<\/strong> pi\u00f9 diffusi appartengono ai generi locali del vino Trebbiano, come il Procanico, che fu il vitigno base dei vini bianchi Orvieto, ma sono coltivati anche il Trebbiano Toscano e variet\u00e0 importate come i vini bianchi Garganega e Tocai. Resistono ed anzi aumentano la propria produzione di anno in anno anche variet\u00e0 indigene come il vino Trebbiano Spoletino, il vino Verdello e soprattutto il vino Grechetto. I vari microclimi della regione permettono la messa a dimora di pi\u00f9 vitigni anche a brevi distanze, cos\u00ec che i vini bianchi sono realizzati con combinazioni di uve che ne aumentano le sfumature di gusto.<\/p>\n<p>E&#8217; il caso del <strong>vino bianco dei Colli del Trasimeno<\/strong>, dove il lago esercita il suo influsso sulle vigne e permette di ricavare un bianco vivace, talvolta elegante e raffinato, o quello della zona di Torgiano dove un vino bianco fragrante e pieno nasce dalle colline a clima caldo, a sud-est di Perugia, ricche di terreni argillosi sabbiosi e calcarei, appoggiati su substrati di tufo. I Colli Altotiberini che si affacciano sul Tevere dal limite settentrionale della regione fin quasi a Perugia, sfruttano i vitigni del Trebbiano Toscano e della Malvasia del Chianti e producono degli ottimi vini bianchi leggeri. I Colli Amerini, ad est del Tevere e lungo la valle del Nera, ed i Colli Martani, sugli altipiani fra Todi e Foligno generano vini bianchi doc fra cui i pi\u00f9 noti sono il Trebbiano, il Grechetto, ed il Grechetto di Todi.
