The Umbrian red wine represents, among all the Italian red wines, a core of high quality in the art of fine wine. The DOC, denomination of controlled origin, and the even more protective DOCG are guaranteeing the fine red wine by Umbria and the main part of the red wines of the region; however, some varieties of grapes deserve a particular mention as they best represent the wine and gastronomic character of the region. The most diffused red wines belong to the varieties of the Sangiovese, followed by the ones of the Ciliegiolo, the Canaiolo, the Montepulciano, the Merlot, the Cabernet, the black Pinot and at last the Gamay. Nevertheless, a typical grape has resisted and is spreading again, although it is surely not indigenous, like the Sagrantino. The various microclimates of the region allow to cultivate diverse grapes also at short distances, so that the red wines are realized with combination of grapes that increase their taste shades.

It is the case of the wine of the Hills of the Trasimeno, where the lake exercises its influence on the grapes and allows to obtain a red wine of medium body, sometimes even robust, or of the wine of the area of Torgiano where a Italian wine of excellent structure comes from the hills with a warm climate, at the south-east of Perugia, wealthy of clayey, sandy and calcareous lands, laying on tuff substratum. The Altotiberini hills above the Tevere river at the northern limit of the region almost up to Perugia, are taking profit of the Sangiovese and of the Slerlot grapes producing excellent ruby and rosé wines relatively light and sweet. In the area of Montefalco, included in the area occupied, beyond the territory of Montefalco and still part of it, by the districts of Bevagna, Gualdo Cattaneo, Castel Ritaldi and Giano dell'Umbria, are cultivated the Sagrantino grapes, from which one obtains the wines of the same name, dry and produced from partially dried grapes.
